dieses Rezept ist geklaut, aber ganz toll:
G Y R O S
(Greece)
This is a typical Seasoning for „Gyros“, from a Chef suitable for 1 kg of meat (pork, chicken or lamb)
50 ml Olive oil
100 g Bacon (Streaky Bacon, Pork Belly Bacon)
(It is important to select a Bacon without any additional flavour, like Maple syrup, etc…, das schreibe ich nur dazu, weil man hier in Asien kaum natürliches erhält)
2 t salt
9 g Pepper
1,7 g Cumin
3 t Oregano
40 g Onions
(MSG optional)
More spices, up to your taste:
Sweet Paprika (Bell Pepper powder)
European Basil (fresh or dried)
Rosemary (fresh) (Liberty Supermarket),
Parsley (Instead of European Parsley I used Chinese Parsley),
Oregano,
Thyme,
garlic
(Coriander, Mayoram)
Slice the meat in thin strips. If the meat is fresh, freeze it a little bit, bevor cutting, it makes it easier, to cut thin strips.
Mince Bacon and Onions together. Mind, that both has to be minced alternating, so that the ingredients are mixed well.
Add your selected spices, up to your taste
(I didn´t use much of Mayoram and Coriander)
Mix together to a smooth consistency. Marinate the meat with this paste overnight. The next day you can use it straight away or freeze it into small portions.
When using, defrost the portions and stir-fry them in hot Olive Oil for a few minutes. (Not too long, otherwise the meat dries up). Just before serving, sprinkle some fresh lemon Juice on the meat.
Serve with fried Potatoes (or Rice), Tzatziki, Pita Bread and Greec Farmer Salad.
Tzatziki (Dip from Yoghurt, Cucumber and garlic) - roula findet zwar, daß Cucumber nichts in Tzatziki verloren hat, neverthless... wenn man es kurz einsalzt, dann ordentlich ausdrückt, verwässert es überhaupt nicht.
500g European Style Yoghurt
1 Cucumber, shredded
3 Garlic pods, smashed
2 T fresh Peppermint, cut very thinly
2 T Olive Oil
1 T White Wine Vinegar (or Rice Vinegar)
Salt
Sugar
Mit Oliven garnieren!!!
